These make a delicious, easy, high protein/low-fat appetizer…or meal if you’re a big eater like me and you eat them all yourself.
4 oz crab meat
3 Tbs chopped fresh cilantro
2 Tbs fresh lime juice
2 Tbs minced shallot
1 red Fresno or jalapeño chili, seeded, minced (1 Tbs)
1/2 teaspoon kosher salt
12 large cherry tomatoes, halved and seeded
2/3 cup guacamole
Place crab in bowl….stop eating it before its ready or get double the amount so you can snack and prepare the dish at the same time….break lumps up with a fork.
Add cilantro, lime juice, shallot, chili and salt. Toss to combine. Cover and refrigerate for 1 hour (you don’t really have to but the time in the refrigerator gives time for the favors to get happy).
Fill tomatoes half full with guacamole and top with crab mixture.
*You can put a dash of hot sauce (like Cholula or Tapatio) on top if you like a spicier flavor.
Crab is easy to come by these days and is available all year around. Many markets have crab available in little refrigerated packets. Don’t bother to get the jumbo pieces. A pouch of the jumbo costs about $12.00 while a pouch of the smaller pieces is about $7.00. If you can’t get regular fresh crab or refrigerated pouch crab use canned. It turns out just fine. To make it even easier you can also buy prepared guacamole at the grocery store if you’re not that keen on making your own. Find the type that doesn’t have added preservatives. It tastes the best and it’s the best for you. You can also just used smushed up avocado if the whole guacamole thing is too daunting.
I use a lot more lime juice and more shallot than the basic recipe calls for….a little extra salt too. You can’t mess it up so experiment away…and enjoy!
